Not having everything you need can lead to unexpected solutions. Trish and I decided to have margaritas for Cinco de Mayo. We have plenty of Tequila and Grand Marnier, but we were short on mix. I prepped our drinks and they had a bit too much of a bite.

Thinking about how we would make our own mix, we realized that we have lime juice in the fridge. A couple of squeezes later and the drinks were even tastier than expected. Insufficient margarita mix was the best thing that could have happened.

When has slim pickings led you to a pleasant surprise?
